COLOURFUL, sweet fruits and vegetables and herbs are in abundance this season.
Directions:
Cut the peels and pith (white layer) off the orange and grapefruit. Slice thinly, then cut bigger pieces into halves. Set aside. Arrange the watercress and butter lettuce on a serving tray. Add the sliced citrus and dried cranberries, then top with orange juice. Serve immediately.
Ingredients:
1 medium-sized orange
1 medium-sized grapefruit
1 1/2 cups watercress
3 cups butter lettuce, roughly chopped
1/4 cup dried cranberries (if fat-free, use oil-free cranberries, or substitute cherries)
Juice from 1/2 orange, to serve

Zucchini Pizza Boats
Roasted courgette is the base for pizza sauce and roasted toppings in this delicious recipe. You’ll find this recipe helps satisfy a pizza craving while keeping you moving forward with your healing.
IIngredients:
4 medium zucchini
Pizza sauce:
½ cup tomato paste (Blend your own if you can)
1 tsp dried oregano
½ tsp dried thyme
1 tsp raw honey
⅓ cup water
Salt & pepper (optional)
Toppings:
¼ cup thinly sliced onion
½ cup cherry tomatoes, halved
¼ cup olives (oil-free and citric acid–free), pitted and sliced in half lengthwise (optional)
4-5 sun-dried tomatoes, roughly chopped
¼ cup diced red bell pepper
4 button mushrooms, thinly sliced
1 teaspoon red pepper flakes (optional)
¼ cup thinly sliced fresh basil, to serve
Zucchini have a mild liver-purging effect, allowing the liver to squeeze out poisonous troublemakers safely.
Tomatoes can help stop cancer cells from multiplying. They can help heal the liver. They are a powerful food that supports the immune system in ways no other fruit can. The rumor that nightshades are unhealthy keeps people in fear of the very fruit that will help them take massive steps toward healing.
Directions:
Preheat the oven to 400°F/200°C. Line a baking sheet with parchment paper.
Trim the ends off each zucchini; then cut in half lengthwise. Carefully scoop out the flesh from the center of each half to form a cavity. Place each half, cut side up, on the baking sheet. Discard the flesh or set aside to use in other dishes.
Make the pizza sauce by mixing together the tomato paste, oregano, thyme, raw honey, and water. Divide the pizza sauce between the zucchini halves and add different topping combinations to each.
Bake for 20 to 25 minutes until the zucchini is tender but not mushy. Sprinkle zucchini boats with fresh basil and serve.
*For the mushrooms, wash and rinse thoroughly with warm to hot water before slicing. Do not use slimy or decaying mushrooms. That’s a sign of oxidizing and aging.
Tips:
For a fat-free recipe, omit the olives. If you do choose to include olives, look for sundried botija olives or another variety that doesn’t contain oil, citric acid, or table salt.
Look for a tomato paste that contains only tomatoes and no other ingredients, such as salt or citric acid.
